Gouda is a historic city in South Holland, situated where the Gouwe and Hollandse IJssel waterways meet. Its compact center is known for canals, brick houses, bridges, and a network of narrow streets surrounding the Markt, one of the Netherlands’ largest historic town squares. The Gothic St. John’s Church dominates the square and is particularly notable for its extensive collection of stained-glass windows. Gouda is also closely associated with its namesake cheese, although the city’s heritage extends beyond food to include pottery, candle making, religious art, and traditional waterways.

Gouda’s history is visible in its civic buildings and canals. The old Town Hall stands prominently in the center of the Markt, with its stepped-gable design and decorative exterior making it one of the city’s best-known buildings. St. John’s Church contains a remarkable series of stained-glass windows known as the Gouda Windows, depicting religious and historical subjects. The Waag, a former weighing house beside the Markt, reflects the importance of regulated trade in the city. Historic almshouses, courtyards, and canal-side buildings add further detail to Gouda’s traditional urban landscape.

The city’s cheese tradition is centered on the Gouda Cheese Market, where farmers and traders demonstrate traditional methods of weighing, bargaining, and transporting large cheese wheels. The market takes place around the Markt and the Waag, which now houses the Gouda Cheese Experience. Gouda’s waterways provide another way to understand its landscape, with canals such as the Nieuwehaven and Westhaven lined by historic buildings. Beyond the center, the surrounding Groene Hart countryside consists of low-lying polders, meadows, drainage ditches, and waterways that form the agricultural landscape of South Holland.

Cheese naturally plays an important role in Gouda’s food culture, with Gouda cheese produced in a range of ages and flavors and commonly served with bread, mustard, or other local products. The city is also associated with stroopwafels, the thin caramel-filled waffle cookies that originated in Gouda and remain a familiar local specialty. Traditional candle making is another part of the city’s heritage, commemorated by the Gouda by Candlelight event, when the Markt becomes a setting for illuminated festivities. Gouda’s combination of cheese trading, stroopwafels, stained glass, canals, and polder surroundings gives the city a strong regional identity.
